Koumbaro

Oak aged Saison style ale

Koumbaro is fermented in stainless with a mixed culture of classic saison strains, wild yeast, and bacteria. The beer then rests in a foudre for 12 months, lending soft oaky notes. Further refermentation on Michigan-grown Balaton and Montmorency cherries brings lush fruit notes and a gentle acidity.
