This beer was an excercise in exploration and place. It started with timing the brew with the south eastern Ohio hay harvest season. We visited Laurel Valley Creamery in Gallipolis, OH and selected some fresh alfalfa. The alfalfa made its way into the mash and we then sent the wort into our dedicated souring tanks in the cellar of our brewpub. Over the course of 3 months the beer went through a primary mixed fermentation with our proprietary saison culture. A beautifully tart and rustic riff on mixed fermentationfarmhouse tradition.
