Wine Barrel Aged Mixed Culture Saison Style Ale
Primary starts as our stainless steel fermented mixed culture saison, MXD FRM. After the initial 2-month fermentation, this mixed culture saison is moved into wine barrels where it rests for 1 year. The long rest in wine barrels allows the beer to take on a deep and developed acid character and lovely oak notes. The beer is then bottle and keg conditioned with that same mixed culture that was used in its primary fermentation. A prudent and focused endeavor that marries tradition and exploration.
