Polycephaly is the rare condition of having two heads. In partnership with Winking Lizard Tavern, we present 2 distinct beers. A bold pairing of fruity sweetness and bright acidity provides a perfect balance to our house mixed fermentation Saison. Polycephaly 8 was refermented on juicy blackberries and conditioned on tart lemon zest, illuminating the herbaceous notes of our house mixed culture.
