Ouillage
Saison style ale aged in wine barrels and refermented with blackberries
Inspired by the thoughtful cellaring of fine wine, this Vienna style Saison was aged in oak barrels for 28 months and refermented on whole blackberries. Ouillage, a name borrowed from French winemakers, alludes to the headspace left inside a barrel after evaporation. This concentration of flavor leaves behind a satuarted tannic structure and a smooth, oaky finish. A testament to having the right headspace, from beer to brewer to cellarman, enjoy Ouillage with an open mind.
